Ingredients for Cheesy hash brown skillet with sunny side up eggs and sausage gravy:

  1. 4 potatoes, washed and grated into hash browns.
  2. 4 eggs.
  3. 2 cups homemade sausage gravy (see my recipe).
  4. 2 tablespoons oil.
  5. 1/4 teaspoon onion powder, garlic powder, soul seasoning and adobo.
  6. 1 cup shredded Colby jack cheese.

  1. Place oil in a large skillet on medium heat and place potatoes in and flatten with a spatula. Season it and leave it alone for 8 minutes. Flip and cook another 5 minutes..
  2. Using a fork make four wells in the hash browns and crack an egg in each one. Cover and reduce heat to low for 6-8 minutes until whites are set. Remove from pan and top with warm sausage gravy and shredded cheese.
  3. You can also top with green onions, mushrooms, red pepper flakes, hot sauce etc..
