Ingredients for Cheesy hash brown skillet with sunny side up eggs and sausage gravy:
- 4 potatoes, washed and grated into hash browns.
- 4 eggs.
- 2 cups homemade sausage gravy (see my recipe).
- 2 tablespoons oil.
- 1/4 teaspoon onion powder, garlic powder, soul seasoning and adobo.
- 1 cup shredded Colby jack cheese.

- Place oil in a large skillet on medium heat and place potatoes in and flatten with a spatula. Season it and leave it alone for 8 minutes. Flip and cook another 5 minutes..
- Using a fork make four wells in the hash browns and crack an egg in each one. Cover and reduce heat to low for 6-8 minutes until whites are set. Remove from pan and top with warm sausage gravy and shredded cheese.
- You can also top with green onions, mushrooms, red pepper flakes, hot sauce etc..
