Ingredients for Sausage roll:

  1. 154 g salted butter.
  2. 308 g all purpose flour.
  3. 52 ml ice cold water.
  4. 1 egg yolk.
  5. 1/2 teaspoon white vinegar.
  6. 600 g sausage.
  7. 3 tablespoon hot chili pepper.
  8. Little seasoning.
  9. 1 teaspoon onion powder.
  10. 1/8 teaspoon nutmeg.

I have been making my own Sausage Rolls for years, and I noticed that the original recipe had excluded onions. I always add finely chopped onions to the sausagemeat along with breadcrums.

Step by step how to cook Sausage roll:

  1. Mash the sausage and add the onion powder, paprika,nutmeg, hot chilli powder and very little seasoning(be careful of the seasoning as sausages are usually salty so no need for salt). Set sausage aside.
  2. In a bowl, add the cold flour and cold diced butter with the egg yolk, vinegar and ice cold water. Then mold gently until dough comes together (do not over work the dough). The keep in the fridge to rest for 30minutes (i din’t add salt to the dough because i used salted butter)..
  3. Take out dough and roll out on a floured surface until 1/8” thick the. Trim off edges to form a rectangle.
  4. Place sausage on one far edge of the dough.
  5. Roll once to wrap sausage.
  6. Brush on egg on the rolled edge (for sealing)..
  7. Then roll one more time to close.
  8. Use a knife to trim off excess dough.
  9. It should look like this.
  10. Cut sausage to shape.
  11. Place on a baking pan lined with parchment paper. Then keep in the fridge to rest for 10minutes.
  12. Bring out after 10minutes and egg wash the top gently.
  13. Then bake in the preheated oven for 30-35minutes or until golden brown..
  14. Enjoy!!!.
