Ok, I'll admit I don't like goat's cheese. I used to, until I had this experience with it (warning: not for the faint of heart). My husband and sister thoroughly enjoyed this salad in its entirety, and I enjoyed sneaking pieces of roasted squash, so we're good here. Spring is the best time of year to enjoy these bright green legumes, either in their tender pods or shelled as a fresh addition to spring dishes. We can't think of a lovelier spring appetizer than these egg-shaped goat-cheese balls flavored with caramelized spring onions, purple chive blossoms, and pink peppercorns.
