Ingredients for Turkey and sausage Gumbo:

  1. 1 lb cooked, shredded dark and white turkey.
  2. 1 lb aundouille sausage.
  3. 1 medium onion.
  4. 1/2 medium bell pepper.
  5. 2 tbsp minced garlic.

  7. 2 tbsp oil.
  8. 3 cup chicken stock.
  9. 3 cup beef stock.
  10. 1 bunch cut okra.

  14. 4 cup cooked rice.

This turkey gumbo is pretty typical in that it has the main meat — turkey legs and thighs — plus something smoked, in this case my homemade andouille sausage, and a seafood like shrimp, crab or crawfish. Step by step how to cook Turkey and sausage Gumbo:

  1. In a large heavy pot brown cut up sausage and then remove. You want to keep those good little burnt bits in the bottom of the pot for more flavor.
  2. In the same pot sautee' your onion, garlic, bellpepper in oil. Cook until wilted and add flour.
  3. Now cook on medium to low heat for about 5 - 7 minutes, stirring constantly.
  4. When your flour starts to brown add both stocks to the pot (you could use boullion and water if you like).
  5. Add salt and cayenne to your taste. There is salt in a lot of the ingredients already so be careful..
  6. Return the sausage to the pot and the turkey and bring to boil.
  7. Add the cut okra and let cook for about 30 minutes until okra is soft. Too long and the okra will get slimey.
  8. Put on rice.
  9. Sprinkle file'on prepared bowl of gumbo and serve.
