  1. 300 grams Smoked sausage, eg. (kielbasa).
  2. 2 large red or white onions.
  3. 2 cup Quartered mushrooms ( about 250g ).
  4. 2 tbsp Red wine vinegar or Balsamic vinegar.
  5. 1 Sprig fresh Rosemary.
  6. 1 clove Garlic ( finely chopped ).
  7. 4 cup Rocket Leaves.

Step by step how to cook Warm Sausage-onion Salad:

  1. Preheat the oven to 220°C . Using a sharp knife cut the sausage diagonally into 1 cm thick slices and the onions into 6 mm thick slices. In a large open roasting pan, toss the sausage, onions, mushrooms, oil, vinegar, rosemary and garlic until well mixed..
  2. Place in the oven and roast the sausage and vegetables for 15 to 20 minutes until they are lightly browned, stirring halfway through the roasting time.
