Ingredients for Warm Sausage-onion Salad:
- 300 grams Smoked sausage, eg. (kielbasa).
- 2 large red or white onions.
- 2 cup Quartered mushrooms ( about 250g ).
- 2 tbsp Red wine vinegar or Balsamic vinegar.
- 1 Sprig fresh Rosemary.
- 1 clove Garlic ( finely chopped ).
- 4 cup Rocket Leaves.
Step by step how to cook Warm Sausage-onion Salad:
- Preheat the oven to 220°C . Using a sharp knife cut the sausage diagonally into 1 cm thick slices and the onions into 6 mm thick slices. In a large open roasting pan, toss the sausage, onions, mushrooms, oil, vinegar, rosemary and garlic until well mixed..
- Place in the oven and roast the sausage and vegetables for 15 to 20 minutes until they are lightly browned, stirring halfway through the roasting time.
- Meanwhile, rinse the rocket leaves and pat them dry. line a serving platter or four individual serving plates with the Rocket. Spoon the sausage and vegetable mixture, with their pan juices, over the the leaves and serve immediately.
