Ingredients for Spicy Rice-hotpot:
- 400 g Pork Loin medallions (or chicken).
- 1 large Spanish onion finally chopped.
- 100 g chorizo sausage, sliced.
- 2 tsp paprika powder.
- 1 tin chopped tomato.
- 1 tsp parsley.
- 1 tsp Cajun.
- salt and pepper.
- 2 bay leaves.
- 1.5 cup easy cook rice.
- 4 cloves garlic.
- chilly pepper of your choice.
- appx 100ml of olive oil.
- 600 ml chicken stock.
Step by step how to cook Spicy Rice-hotpot:
- Chop onion and sauté in oil until soft, adding a spoonful of water between cooking. Take it off heat and add paprika powder, and all other ingredients except the rice. Stir well and allow to cook for approximately 10 minutes, stirring often. Add 1 and a half cup of easy cook rice and 3 cups of chicken stock, cover and cook for 30 minutes or until rice is soft and all liquid evaporated.
