Ingredients for Risotto alla Monzese:
- 350 g risotto rice.
- 200 g sausages, lunganega if poss.
- Small chopped onion.
- 1-1.2 litres hot stock.
- Olive oil.
- Saffron.
- to taste Salt.
- Glug of white wine.
- Knob butter.
- Plenty of Parmesan.
Step by step how to cook Risotto alla Monzese:
- Fry onions in olive oil, after a min add the chopped sausages. Cook until sausages brown. Add rice and cook for another min or so..
- Add wine and let it evaporate. Then add about 3/4 of the stock, saffron and salt. Stir and cook on low for about 20 mins. Add more stock if needed..
- Towards end of cooking time, add butter and Parmesan. Stir until creamy. Serve and enjoy 😁.
