Ingredients for Risotto alla Monzese:

  1. 350 g risotto rice.
  2. 200 g sausages, lunganega if poss.
  3. Small chopped onion.
  4. 1-1.2 litres hot stock.
  5. Olive oil.
  6. Saffron.
  7. to taste Salt.
  8. Glug of white wine.
  9. Knob butter.
  10. Plenty of Parmesan.

Step by step how to cook Risotto alla Monzese:

  1. Fry onions in olive oil, after a min add the chopped sausages. Cook until sausages brown. Add rice and cook for another min or so..
  2. Add wine and let it evaporate. Then add about 3/4 of the stock, saffron and salt. Stir and cook on low for about 20 mins. Add more stock if needed..
  3. Towards end of cooking time, add butter and Parmesan. Stir until creamy. Serve and enjoy 😁.
