Ingredients for Dan's Jambalaya:

  2. 1 unit White Onion.
  3. 1 unit Green Bell Pepper.
  4. 1 unit Spring Onion.
  5. 1/4 lb Smoked Polish Sausage.
  6. 1/4 can Chopped Tomatoes and Juice.
  7. 1/2 tsp Salt.
  8. 1 tsp Chilli Flakes.
  9. 1 tsp Dan's Chicken Seasoning.
  10. 1 tsp Paprika.
  11. 1 tsp Cayenne Pepper.
  12. 1 unit Carrot.
  13. 1 tsp Chopped Garlic.
  14. 1 unit Chicken Breast.
  15. 1 cup White Rice.
  16. 2 1/2 cup Boiling Water.
  17. 3 tbsp Oil.
  18. 1 bunch Parsley.

Step by step how to cook Dan's Jambalaya:

  1. Fine chop the Carrot, Onion, Spring Onion and Green Pepper. Slice the Smoked Sausage in to 1cm slices and dice the Chicken in to bite size chunks..
  2. Heat the oil in a skillet and add all the spices and garlic and allow to cook out for 2-3 minutes to release there flavours..
  3. Add to the pan the Chicken and Sausage and brown off. Once the meats are browned add the vegetables. Cook for 5 minutes till the carrots and peppers soften..
  4. Keeping the pan on the heat add the Rice and mix well with the rest of the ingredients. Again allow 2-3 minutes for the spices to coat the rice and take on the flavours..
  5. Now add in the boiling water (saves time waiting for it to heat up on the stove) and the Canned Tomatoes. Bring back up to a boil, cover with a lid and place in a preheated oven at arounf 175'. for 20-30 minutes..
  6. Every 10 minutes i 'roll' the rice and put back in oven till the rice is done. Once cooked add the chopped Parsley and serve. Goes great with my Collard Greens and Grilled Corns..
