Ingredients for Sausage Rice Stuffed Capsicum:

  1. 4 Capsicum Medium sized.
  2. 1 Cup rice Cooked.
  3. 1 Onion.
  4. 1 Cup Chicken Sausage Chopped.
  5. Parsley.
  6. Salt.
  7. Pepper.
  8. Olive Oil.

Step by step how to cook Sausage Rice Stuffed Capsicum:

  1. Wash & scoop the side of the capsicum. Choose well shaped ones that will stand in a dish if not trim the bottom of the capsicum to make it stand..
  2. Saute the onions n sausages & add the cooked rice, chopped parsley, salt n pepper as per your tatse.
  3. Brush the outside and inside of the capsicum with olive oil before stuffing to give it a glaze look This will also prevent the outer skin from burning.
  4. Stuff the prepared capsicum with the rice stuffing and place it on your baking tray.
  5. Grill/Bake in a pre heated oven at 180 C for 10 to 15 Mins (depending on your ovens).
  6. When the outer skin shrivels it is cooked take it out and serve hot.
