Ingredients for Sausage pilau:

  2. Rice.
  3. Onions.

Step by step how to cook Sausage pilau:

  1. On a heated pan with little oil add your sausages and pan sear them till you get a good even cook on them. They don’t necessarily have to cook through..

  3. Heat oil then add a generous amount of onions. I use about 3 medium size ones for 1/2 kg of rice. Fry the onions until they start to brown..

  5. When everything is nicely browned add your pilau masala in and let it fry in the oil until it becomes fragrant. After 2 minutes with an occasional stir, add in the tomato paste. Cook this mixture for a few minutes and careful not to burn the onions..
  6. Add the potatoes and stir.
  7. Cook covered in medium heat for about 2 minutes..
  8. By now the potatoes have fried in the oil to give them a very nice flavour..
  9. Add 1/4 cup of water and salt then cover the sufuria. This should only be done if the potatoes are cut into big chunks.
