Ingredients for Sausage Casserole:
- 1 tbsp olive oil.
- 8 gluten free sausages.
- 1 onion chopped.
- 1 pepper chopped.
- 1 tsp Oregano.
- 2 garlic cloves minced.
- 1 tsp smoked paprika.
- pinch chilli flakes.
- 400 g chopped tomatoes.
- 450 ml vegetable stock.
- 200 g brown rice.
- salt and pepper for seasoning.
Step by step how to cook Sausage Casserole:
- Add the olive oil to a large pan over a medium heat Add the sausages and cook until the skin is roasted, about 10 minutes Remove from the pan and set aside.
- Add the onion, peppers, oregano, garlic, paprika and chilli flakes Sauté for 8 minutes.
- Stir in the chopped tomatoes, stock, rice and seasoning Bring to the boil then reduce to a simmer.
- Add the sausages back into the pan Simmer for 25 minutes or until the rice is cooked.
