Ingredients for Budget Vegetable and Sausage Curry:

  1. 1 Courgette.
  2. 1 medium Aubergine.
  3. 1 large Onion.
  4. 1 small tin Sweetcorn.
  5. 2 spicy long sausages(or usual ones).
  6. 150 grams fresh Peas.
  7. 150 grams fresh green beans.
  8. 1 small tin chopped Tomatoes.
  9. 1 small tin Coconut Milk.
  10. Cooking Oil.
  11. Smoked Paprika.
  12. Ground Garlic.
  13. Ground Cumin.

Step by step how to cook Budget Vegetable and Sausage Curry:

  1. Peel and dice Onions, put into a saucepan with the oil to start browning. Add diced courgette and diced Aubergine. Stir well..
  2. After Onion has started to soften, drain the Sweetcorn, add this and the rest of vegetables to the pot and stir well..
  3. Chop spicy sausage into small pieces and add. Cook for about 5-10 minutes then add the coconut milk and chopped tomatoes.
  4. Check taste, (as some sausages are quite salty), then add a sprinkle of Smoked Paprika, Cumin and Garlic to taste..
  5. Cook for another 5-10 minutes until liquid thickens and sausage is heated through. Serve with bread and enjoy!.
