Ingredients for New Orleans gumbo ๐ŸŽถ๐ŸŽบ:

  2. 250 g fresh king prawns.
  3. 300 g chicken breasts (diced).
  4. 1 spiced sausage e.g. chorizo.
  5. 1 red pepper.
  6. 1 orange pepper.
  7. 1 red onion.
  8. 250 g okra (ladyfingers).
  9. 2 garlic cloves.
  10. 1 red chilli.
  11. 1 celery stick.
  12. 1 bunch lemon thyme (stalks removed).
  13. 100 ml chicken stock.
  14. 1 can chopped tomatoes.
  15. 1 tbsp flour.
  16. โž–Creole seasoning โž–.
  17. 2 tsp smoked paprika.
  18. 2 tsp cayenne pepper.
  19. 1 tsp pepper.
  20. 1 tsp onion powder.
  21. 1 tsp onion powder.
  22. 2 tsp mixed herbs.
  23. 1 pinch salt.

Step by step how to cook New Orleans gumbo ๐ŸŽถ๐ŸŽบ:

  1. Chop the chorizo. Place in a hot pan and cook to release the oils.
  2. Chop the peppers, onion, garlic, chilli, celery and okra.
  3. Remove the sausage from the pan with a slotted spoon saving the oil. Add the flour to the oil to make a roux. Cook to darken the roux..
  4. Add the chopped vegetables, cooked chorizo, chicken and creole spices (see ingredients). Cook for 10mins on a medium heat.
  5. Add the stock to deglaze the pan then add the chopped tomatoes and thyme. Cook on medium heat until the sauce has reduced.
  6. Finally add the prawns and cook for a couple minutes.
  7. Serve topped with some lemon thyme and serve with crusty bread.
