  1. 1 packages link sausage 8oz.
  2. 1/2 bunch arugala.
  3. 1/2 bunch kale.
  4. 1/2 onion.
  5. 1/2 cup milk.

Step by step how to cook Sausage and kale soup:

  1. Cook sausage in medium saucepan, chopping into crumbling pieces..
  2. Drain grease.
  3. Roughly chop onion and add to sausage and cook until onions are clear..
  4. add 4 to 6 cups water or stock. ( I use water).
  5. Roughly chop arugala and add to pot.
  6. Roughly chop kale and add to pot.
  7. Simmer until greens begin to wilt, then add milk.
  8. This recipe can easily be modified into a vegan one by exchanging sausage for soy replacement or tofu, and the milk can be relaced with almond milk or simply omitted..
