Ingredients for Sausage Soup:
- 2 lb Italian sausage (1 lb. mild & 1 lb. hot).
- 1 large yellow onion (chopped).
- 1/2 bunch celery (chopped).
- 8 clove garlic (minced).
- 1 28 oz. can diced tomatoes.
- 5 roma tomatoes (diced).
- 1 32 oz. box of chicken broth.
- 2 tbsp olive oil.
- 2 tsp fresh oregano (chopped).
- 2 tsp dried basil.
- 2 tsp fresh thyme (chopped).
- 1 salt & pepper to taste.
- 1/2 lb small soup shells.
- 1 parmesan or romano cheese for garnish.
Step by step how to cook Sausage Soup:
- remove sausage from casings.
- chop onion, celery, roma tomatoes, oregano, and thyme.
- mince garlic.
- heat olive oil in large soup pot.
- crumble sausage into pot, and cookutil no longer pink.
- add onions, celery, tomatoes, chicken broth, mix well and add oregano, basil, and thyme and bring to a boil.
- reduce heat and simmer for thirty minutes.
- after thirty minutes, add shells and cook until done, about 15 minutes.
- cook garlic bread to serve with meal and enjoy.
