Ingredients for Pea Soup:

  1. 1 lb Dried Split Peas.
  2. 2 quartz water.
  3. 1.5 lb ham steak; diced.
  4. 1/2 tsp salt.
  5. 1/4 tsp black pepper.
  6. 1 Package (2 links) Eckrich skinless smoked sausage; halved & chopped.
  7. 2 Stalks Celery; peeled & chopped.
  8. 3 Carrots; peeled & chopped.
  9. 1/2 bag golden baby potatoes; quartered.
  10. 2 yellow onions; diced.

Step by step how to cook Pea Soup:

  1. In a large dutch oven add peas and 2qts water.
  2. Simmer for 2 min, turn off heat, cover and let soak for 1 hour (or soak peas overnight).
  3. Add ham, onion, salt and pepper.
  4. Cover, bring to a boil.
  5. Reduce to a simmer and simmer covered, gently, for 90 minutes; stir often.
  6. Add sausage, celery, carrots, and potatoes.
  7. Cover and simmer gently for 30 min, or until potatoes are tender; stir often.
