Ingredients for Toscana Soup:

  1. 1 package breakfast sausage links, chopped.
  2. 1 package bacon (not precooked), chopped.
  3. 1 med onion, chopped.
  4. 3 cloves garlic, minced.
  5. 2-3 packs Knorrs chicken stock base.
  6. 1 quart water.
  7. 3 large potatoes, cut into 1 inch cubes.
  8. 1 bunch kale, stemmed and chopped.
  9. 1/2-1 cup heavy cream.
  10. salt and pepper.

Step by step how to cook Toscana Soup:

  1. In a soup pot fry sausage till done, remove and set aside, drain grease..
  2. In the same pot fry bacon till crisp, remove, divide and set aside. Drain grease, keeping a few teaspoons in the pot..
  3. Add onions to the bacon grease and cook until translucent, add the garlic and cook an additional minute..
  4. Add chicken stock base*, water and potatoes..
  5. Bring to a boil, reduce heat and simmer for 15 minutes or until potatoes are fully cooked..
  6. Add sausage, kale, half the bacon and the cream*..
  7. Simmer an additional 4 minutes or until desire doneness of kale..
  8. Salt and pepper to taste, serve topped with remaining crumbled bacon..
  9. When I add the stock base and cream I start with the minimum amount required and then taste and add or not to suite my own personal preference..
