- 3 Sweet Potatoes , medium , cubed.
- 1 Yellow Onion , medium , thinly Sliced.
- 5 Cups Kale , chopped , stems removed.
- 1/3 Cup Mushrooms , Sliced.
- 3 Chicken Sausage.
- 6 Cups Chicken Broth.
- 1 Clove Garlic.
- 1/2 Teaspoon Thyme.
- 1/2 Teaspoon Coriander.
- Black Pepper.
- Salt.
- Olive Oil.

- Preheat oven to 400F. Place cubed sweet potatoes in a baking pan or dish. Season with salt and pepper and coat with olive oil..
- Bake for 20 – 25 minutes, until soft. Remove from oven and set aside..
