  1. 1 tbsp olive oil.
  2. 8 gluten free sausages.
  3. 1 onion chopped.
  4. 1 pepper chopped.
  5. 1 tsp Oregano.
  6. 2 garlic cloves minced.
  7. 1 tsp smoked paprika.
  8. pinch chilli flakes.
  9. 400 g chopped tomatoes.
  10. 450 ml vegetable stock.
  11. 200 g brown rice.
  12. salt and pepper for seasoning.

Step by step how to cook Sausage Casserole:

  1. Add the olive oil to a large pan over a medium heat Add the sausages and cook until the skin is roasted, about 10 minutes Remove from the pan and set aside.
  2. Add the onion, peppers, oregano, garlic, paprika and chilli flakes Sauté for 8 minutes.
  3. Stir in the chopped tomatoes, stock, rice and seasoning Bring to the boil then reduce to a simmer.
  4. Add the sausages back into the pan Simmer for 25 minutes or until the rice is cooked.
